Okrem t\u00fdchto geografick\u00fdch rozdielov existuj\u00fa obrovsk\u00e9 rozdiely aj v typoch l\u00e1tok, ktor\u00e9 s\u00fa zodpovedn\u00e9 za choroby pren\u00e1\u0161an\u00e9 potravinami (napr. v\u00edrusy, bakt\u00e9rie, parazity).<\/p>\n<p><!--more--><\/p>\n<p>V re\u0165azci potravinovej bezpe\u010dnosti existuje ve\u013ea \u010dl\u00e1nkov od \u201efarmy po vidli\u010dku\u201c. Aj ke\u010f v r\u00e1mci pomoci po\u013enohospod\u00e1rom, priemyseln\u00fdm odvetviam a re\u0161taur\u00e1ci\u00e1m sa rob\u00ed mnoho preto, aby sa zariadila bezpe\u010dnos\u0165 ich potrav\u00edn, \u00fa\u010das\u0165 spotrebite\u013eov na bezpe\u010dnom zaobch\u00e1dzan\u00ed s potravinami je \u010dasto prehliadan\u00e1. Bezpe\u010dn\u00e1 manipul\u00e1cia s potravinami je ve\u013emi d\u00f4le\u017eit\u00e1, preto\u017ee predstavuje kone\u010dn\u00fa f\u00e1zu prevencie chor\u00f4b pren\u00e1\u0161an\u00fdch potravinami. S\u00fa to:<\/p>\n<ol>\n<li>Udr\u017eujte ruky a n\u00e1radie \u010dist\u00e9,<\/li>\n<li>Odde\u013ete surov\u00e9 a varen\u00e9 jedlo (najm\u00e4 pri n\u00e1vrate z trhu \/ obchodu a pri skladovan\u00ed v chladni\u010dke),<\/li>\n<li>Potraviny d\u00f4kladne povarte,<\/li>\n<li>Udr\u017eujte jedlo pri bezpe\u010dnej teplote (t. j. tepl\u00e9 jedlo hor\u00face a studen\u00e9 jedlo studen\u00e9)<\/li>\n<li>Pou\u017e\u00edvajte bezpe\u010dn\u00fa vodu a suroviny.<\/li>\n<\/ol>\n<p><strong>Predpovedanie spotrebite\u013esk\u00e9ho spr\u00e1vania<\/strong><\/p>\n<p>Prvotn\u00e9 v\u00fdskum \u00falohy spotrebite\u013ea sa s\u00fastredili na ich vedomosti ako na prim\u00e1rny vplyv na ich spr\u00e1vanie. <a href=\"https:\/\/ses.library.usyd.edu.au\/bitstream\/2123\/8392\/2\/Consumer%20food-safety%20education%0for%20the%20domestic%20environment%20-%20a%20systematic%20review.pdf\">Systematick\u00e9 sk\u00famanie<\/a> na\u0161lo d\u00f4kazy o tom, \u017ee vedomosti nemusia nevyhnutne vies\u0165 k bezpe\u010dn\u00e9mu spr\u00e1vaniu sa k potravin\u00e1m. To plat\u00ed aj pre in\u00e9 so zdrav\u00edm s\u00favisiace spr\u00e1vanie, ale vedomosti s\u00fa potrebn\u00e9, aj ke\u010f nie dostato\u010dn\u00e9 na zmenu spr\u00e1vania, preto\u017ee to pom\u00e1ha porozumie\u0165 ak\u00e9 je \u201eako\u201c a \u201epre\u010do\u201c dan\u00e9ho spr\u00e1vania.<\/p>\n<p>Aby v\u00fdskumn\u00edci lep\u0161ie pochopili, ak\u00e9 \u010fal\u0161ie vplyvy m\u00f4\u017eu spotrebite\u013eom pom\u00f4c\u0165 pri bezpe\u010dnej manipul\u00e1cii s potravinami, pou\u017eili r\u00f4zne te\u00f3rie, predov\u0161etk\u00fdm z psychol\u00f3gie. Zah\u0155\u0148ali te\u00f3riu pl\u00e1novan\u00e9ho spr\u00e1vania, te\u00f3riu ochra\u0148uj\u00facej motiv\u00e1cie a model so zdrav\u00edm s\u00favisiacich presved\u010den\u00ed. Ned\u00e1vna <a href=\"https:\/\/www.liebertpub.com\/doi\/pdf\/10.1089\/fpd.2017.2288\">preh\u013eadov\u00e1 \u0161t\u00fadia<\/a> preh\u013ead tohto v\u00fdskumu zistil, \u017ee z\u00e1mer, soci\u00e1lne normy, seba\u00fa\u010dinnos\u0165 a zvyk s\u00fa d\u00f4le\u017eit\u00fdmi vplyvmi na bezpe\u010dn\u00e9 zaobch\u00e1dzanie s potravinami pre spotrebite\u013ea, a dospel k z\u00e1veru, \u017ee intervencie zalo\u017een\u00e9 na t\u00fdchto kon\u0161truktoch by boli pravdepodobne \u00fa\u010dinn\u00e9 na zlep\u0161enie ich spr\u00e1vania.<\/p>\n<p><strong>Intervencie zameran\u00e9 na hygienu potrav\u00edn<\/strong><\/p>\n<p>\u010eal\u0161ia ve\u013ek\u00e1 <a href=\"https:\/\/bmcpublichealth.biomedcentral.com\/articles\/10.1186\/s12889-015-2171-x\">preh\u013eadov\u00e1 \u0161t\u00fadia<\/a> na\u0161la d\u00f4kazy o tom, \u017ee vzdel\u00e1vacie intervencie boli \u00fa\u010dinn\u00e9 na zlep\u0161enie bezpe\u010dnosti potrav\u00edn v dom\u00e1cnosti. Existuj\u00fa ale aj \u010fal\u0161ie \u00fa\u010dinn\u00e9 intervencie, ktor\u00e9 sa okrem vzdel\u00e1vania spotrebite\u013eov zameriavaj\u00fa aj na psychosoci\u00e1lne kon\u0161trukty. Pr\u00edkladom je <a href=\"https:\/\/pdfs.semanticscholar.org\/72e0\/fce01c8c67d7d92212ab7d983aba092b4250.pdf\">intervencia<\/a> zalo\u017een\u00e1 na te\u00f3rii pl\u00e1novan\u00e9ho spr\u00e1vania, ktor\u00e1 bola \u00faspe\u0161n\u00e1 pri zmene spr\u00e1vania s\u00favisiaceho s bezpe\u010dnou manipul\u00e1ciou s potravinami. T\u00e1to intervencia poskytla vysoko\u0161kolsk\u00fdm \u0161tudentom inform\u00e1cie o bezpe\u010dnosti potrav\u00edn a mo\u017en\u00fdch strat\u00e9gi\u00e1ch, ako napr\u00edklad vypracovanie konkr\u00e9tnych pl\u00e1nov, ktor\u00e9 maj\u00fa pom\u00f4c\u0165 zv\u00fd\u0161i\u0165 vn\u00edman\u00fa kontrolu svojho spr\u00e1vania. Intervencia zv\u00fd\u0161ila vn\u00edman\u00fa kontrolu nad vlastn\u00fdm spr\u00e1van\u00edm aj bezpe\u010dn\u00e9 zaobch\u00e1dzanie s potravinami. Tieto zistenia nazna\u010duj\u00fa, \u017ee spotrebite\u013eom m\u00f4\u017eeme pom\u00f4c\u0165 t\u00fdm, \u017ee ich pou\u010d\u00edme o tom, ako sa spr\u00e1va\u0165 pri manipul\u00e1cii s potravinami bezpe\u010dne, a povzbud\u00edme ich, aby si k tomu vypracovali konkr\u00e9tne kroky (napr. navies\u0165 ich diskusiou k rozhodnutiu pou\u017ei\u0165 samostatn\u00e9 dosky na kr\u00e1janie m\u00e4sa a zeleniny).<\/p>\n<p>\u010eal\u0161ia \u00faspe\u0161n\u00e1 <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0963996914006279\">intervencia<\/a> bola zalo\u017een\u00e1 na te\u00f3rii zvykov. T\u00e1to intervencia pomohla \u0161tudentom vysoko\u0161kolsk\u00e9ho \u0161t\u00fadia rozvin\u00fa\u0165 si n\u00e1vyk na dezinfikovanie utierky jej ohrievan\u00edm v mikrovlnke prostredn\u00edctvom informa\u010dn\u00e9ho plag\u00e1tu a poskytovan\u00edm pripomienok na vykon\u00e1vanie tak\u00e9hoto spr\u00e1vania ka\u017ed\u00e9 tri alebo p\u00e4\u0165 dn\u00ed. Spr\u00e1vanie sa po\u010das trojt\u00fd\u017ed\u0148ov\u00e9ho testovacieho obdobia v\u00fdznamne zv\u00fd\u0161ilo a udr\u017ealo sa aj po trojt\u00fd\u017ed\u0148ovom sledovan\u00ed. Tieto zistenia v praxi nazna\u010duj\u00fa, \u017ee by bolo u\u017eito\u010dn\u00e9 poskytn\u00fa\u0165 klientom inform\u00e1cie o bezpe\u010dnosti potrav\u00edn a tie\u017e im pom\u00f4c\u0165 pri vytv\u00e1ran\u00ed n\u00e1vykov pre konkr\u00e9tne spr\u00e1vanie.<\/p>\n<p>Stru\u010dne povedan\u00e9, vy\u0161\u0161ie uveden\u00fd v\u00fdskum nazna\u010duje, \u017ee ako odborn\u00edci na psychol\u00f3giu zdravia m\u00f4\u017eeme urobi\u0165 ve\u013ea pre to, aby sme <a href=\"http:\/\/health.thewest.com.au\/news\/3341\/whos-to-blame-for-food-poisoning\">na\u0161im klientom<\/a> pomohli zapoji\u0165 sa do tohto z\u00e1sadn\u00e9ho spr\u00e1vania v oblasti zdravia. Za\u010d\u00edna sa to vzdel\u00e1van\u00edm na\u0161ich klientov o bezpe\u010dnosti potrav\u00edn, pom\u00e1hame im c\u00edti\u0165 sa sebaisto v ich schopnos\u0165 zapoji\u0165 sa do spr\u00e1vania a tie\u017e im pom\u00e1hame pri budovan\u00ed n\u00e1vykov.<\/p>\n<p>Na z\u00e1ver je potrebn\u00e9 poznamena\u0165, \u017ee zatia\u013e \u010do v\u0161etci spotrebitelia s\u00fa vystaven\u00ed riziku choroby z potrav\u00edn, asi 25% popul\u00e1cie je vystaven\u00fdch vy\u0161\u0161iemu riziku, vr\u00e1tane tehotn\u00fdch \u017eien, det\u00ed do 5 rokov, star\u0161\u00edch dospel\u00fdch a \u013eud\u00ed so zn\u00ed\u017eenou imunitou. Preto je d\u00f4le\u017eit\u00e9, aby odborn\u00edci na psychol\u00f3giu zdravia rozpoznali konkr\u00e9tne pr\u00edle\u017eitosti pre vy\u0161\u0161ie na\u010drtnut\u00e9 intervencie, napr\u00edklad ke\u010f maj\u00fa \u013eudia chronick\u00e9 zdravotn\u00e9 \u0165a\u017ekosti, ke\u010f pracuj\u00fa s rodi\u010dmi alebo star\u0161\u00edmi dospel\u00fdmi a ke\u010f \u017eeny uva\u017euj\u00fa o tehotenstve.<\/p>\n<p><strong>Praktick\u00e9 odpor\u00fa\u010dania<\/strong><\/p>\n<ul>\n<li>Pou\u010dte \u013eud\u00ed, \u017ee bezpe\u010dnos\u0165 potrav\u00edn za\u010d\u00edna v dom\u00e1cnosti a \u017ee d\u00f4le\u017eit\u00fdmi predchodcami spr\u00e1vania s\u00fa \u00famysel, soci\u00e1lne normy, seba\u00fa\u010dinnos\u0165 a zvyk.<\/li>\n<li>Nepodce\u0148ujte \u00falohu vedomost\u00ed. Vyu\u017ei\u0165 n\u00e1rodn\u00e9 a glob\u00e1lne zdroje na vzdel\u00e1vanie spotrebite\u013eov o d\u00f4le\u017eitosti spr\u00e1vania v oblasti bezpe\u010dnosti potrav\u00edn; len \u010do tieto inform\u00e1cie maj\u00fa, je mo\u017en\u00e9 \u013eahko prija\u0165 ur\u010dit\u00e9 jednoduch\u00e9 spr\u00e1vanie.<\/li>\n<li>Zd\u00f4raznite d\u00f4le\u017eitos\u0165 bezpe\u010dnosti potrav\u00edn zd\u00f4raznen\u00edm toho, ako bezpe\u010dn\u00e9 spr\u00e1vanie pri varen\u00ed a zaobch\u00e1dzan\u00ed s potravinami m\u00f4\u017ee ma\u0165 vplyv na zdravie a minimalizova\u0165 riziko otravy jedlom pre jednotlivcov a ich bl\u00edzkych.<\/li>\n<li>Rie\u0161te racion\u00e1lne (napr. z\u00e1mer) aj automatick\u00e9 (napr. zvyk) procesy.
